Is it Really August?

The weather on Saturday is going to be perfect for outdoor activities.

There is so much In-Season Jersey Fresh produce at the market - from all kinds of berries, to all kinds of beans, melons, tomatoes, corn, squash and on and on.....

It seems like it was only yesterday that blueberries arrived at the market. Before you know it, cranberries will be here!



Last week so many of you gathered around Chef Tim Witcher to taste his fresh and quite unique salad he was serving up. I've written the delicious recipe below.
(Next week I'll include his Roasted Jersey Corn Salad with Smoked Bacon Lime Dressing.)





Watermelon Salad with Fresh Mozzarella, Basil and Arugula



Ingredients:

2 cups - watermelon, small diced pieces

1/2 cup - fresh mozzarella, small diced pieces

6 each - basil leaves sliced thin

2 cups - baby arugula

1/4 cup - red onion sliced thin

2 tbsp - balsamic vinaigrette

Salt and pepper


Toss all ingredients in large bowl.
Add salt and pepper to taste.
Serve right away and enjoy!
